I love roasted vegetable. Cauliflower, broccoli, sweet potatoes…all are great. Green beans are very easy to roast as well. A little bit of olive oil,garlic and high heat takes them to a higher level – crispy and flavorful. If you have any leftovers, chop them up and add them to a couscous or grain salad.
1 pound green beans (I used Trader Joe’s french green beans)
2 tbs olive oil
2 cloves garlic – minced
Salt and Pepper to taste
Preheat oven to 400 degrees. Wash green beans and chop off their tops. Toss green beans with oil and minced garlic in a bowl. Sprinkle with salt and pepper. Transfer to a baking sheet. Cook for 8 minutes. Stir green beans slightly (or just give the pan a shake) and continue baking for 4 more minutes (total of 12 minutes baking time).
