Farro Salad

This farro salad is a simple, hearty, whole grain salad made with nutty farro, apples and grapes.  Quick and easy to make – filling and flavorful.

Salad Ingredients:

  • 1 cup of uncooked farro
  • 1/2 vegetarian bouillon cube
  • 1 1/2 cups seedless grapes – cut in half
  • 1 medium sized apple diced – I used a gala apple
  • 4 cups of arugula – roughly chopped
  • 2 oz of feta cheese – diced
  • 1/3 cup walnut pieces

Salad Dressing:

  • 3 tbs olive oil
  • 1 tbs white wine vinegar
  • 1 tsp honey
  • 8 twists of black pepper
  • A pinch of salt

Instructions

  1. Cook the farro according to package instructions.  Add 1/2 bouillon cube to the water as the farro cooks for additional flavor.  If the farro has any broth/water left over when done then strain that off using a colander.
  2. Let the farro cool slightly by spreading out on to a baking sheet.
  3. While the farro is cooking, slice the grapes in half and dice the apples.
  4. Roughly chop the arugula and dice the feta cheese.
  5. Whisk together the dressing ingredients.
  6. Add the arugula and farro to a large bowl, add grapes, apples, feta and walnuts.
  7. Pour the dressing over the salad and toss gently to combine.

This recipe makes 4 servings if used as a side salad.  If eating as a main salad it serves 2.
